Jacket Potato with maple syrup and crispy onions

Ingredients

  • 4 potatoes of about 200g each
  • 1 Tropea onion
  • 2 tablespoons cornstarch
  • 4 tablespoons of MapleFarm Pure Maple Syrup – Dark
  • 500 ml peanut oil for frying
  • salt
  • pepper
  • extra virgin olive oil

Instructions

  • Peel the onion and cut it very thin. Rinse it in ice water and then dry it very well with paper towels or a kitchen towel.
  • Dip the onion pieces in cornstarch to dry them further and fry a handful at a time in hot oil (180°) until crispy. Drain on paper towels and toss when cold.
  • Wash the potatoes with a brush to remove all soil residue. Preheat the oven in static mode to 200°.
  • Prick the potatoes with a toothpick across the surface and cook them in the microwave for 5 minutes per side.
  • Place them in an oven-safe dish and sprinkle them with oil and salt. Bake them for about 30 to 40 minutes, turning them halfway through cooking. Make sure they are soft inside by poking them with a toothpick.
  • Cut them in half lengthwise and drizzle them with oil and maple syrup. Top with the fried onions and pepper. Eat them hot.
