Ingredients
- 600g frozen chips or fresh potatoes cut into strips
- 150g cubed fontina-type cheese
- 500ml meat stock
- 2 tablespoons of tomato paste
- 1/2 onion, chopped
- 1 clove of garlic, minced
- 2 drops of Worchestershire sauce
- 2 drops of apple cider vinegar
- 1 teaspoon maple syrup MapleFarm Pure Maple Syrup – Dark
- 35g butter
- 30g of flour
- salt
- pepper
- sunflower oil for frying
Instructions
- In a medium-sized saucepan add meat broth, onion, garlic, tomato paste, Worcestershire sauce, vinegar, maple syrup and the pepper.
- Bring to a boil, then reduce the heat and simmer for 15 minutes. Then strain and adjust salt if necessary.
- In a saucepan melt the butter over medium heat, add the flour and cook over low heat for one minute, stirring constantly, creating a roux.
- Slowly incorporate the broth into the roux until it is completely blended and cook for a few minutes until the sauce has reached a fairly thick consistency.
- Fry the fries, divide them into individual plates, sprinkle them with the cheese cubes and cover them with hot sauce.
