Ingredients
For the salad
- 120g basmati rice
- 140g frozen edamame beans
- 8 prawns
- 1 mango
- 8 radishes
- salt
- extra virgin olive oil
- black pepper
For dressing
- 70 g ofMapleFarm Pure Peanut Butter Creamy
- 1 tablespoon of sesame oil
- 1 pinch of ginger powder
- 1 lime (juice)
- 1 tablespoon of MapleFarm Pure Maple Syrup Dark2 tablespoons soy sauce
To garnish
- 1 teaspoon white sesame seeds
- 1 lime
Instructions
- Rinse basmati rice in a fine-mesh strainer until all starch is removed.
- Put the drained rice in a saucepan and cover with salted water to a trickle.
- Cook over medium-low heat, covered, for about 15 minutes or at least until it has fully absorbed the water.
- Transfer the rice to a bowl, drizzle with a little oil, and let it cool.
- Meanwhile, boil the edamame in salted water according to the times on the package (keep them crisp), drain and let cool.
- Shell the shrimp and brown them in a pan with a drizzle of oil and a pinch of pepper just 2 minutes per side. Let them cool.
- Dice the mango pulp. Wash the radishes well and cut them into rounds.
- Prepare the sauce by whisking sesame oil, 1 pinch of ginger powder, juice of one lime, pure creamy peanut butter, maple syrup, and soy sauce in a bowl.
- Transfer the dressing to a measuring bottle, remembering to shake well before use.
- Arrange ingredients on individual plates, drizzle with prepared dressing, garnish with sesame seeds and sliced lime. Serve cold.
