Ingredients

For the salad

  • 150g of cleaned valerian salad greens
  • 1 ripe avocado
  • 100 g fresh or frozen broad beans
  • 125 g of fresh goat cheese
  • lemon juice qb

For dressing:

Instructions

  • Blanch the fava beans for two minutes and peel off the skin.
  • Clean the avocado and cut it into slices, sprinkle it with a few drops of lemon so that it does not blacken.
  • Arrange the salad on plates and distribute the avocado and fava beans, seasoning with a little salt.
  • Add fresh sliced goat cheese.
  • In a bowl, create a vinaigrette by emulsifying cranberry juice with maple syrup, salt, chili and oil.
  • Transfer the emulsion to a small saucepan and heat it.
  • Dissolve cornstarch in a couple of tablespoons of warm vinaigrette, then add to the remaining vinaigrette and thicken slightly.
  • Dress the salad with the dressing.
