Vegan Maple Syrup Crème Brûlée

  • Pour half the coconut milk into a saucepan, add the maple syrup and mix well.
  • Dissolve the cornstarch in the remaining coconut milk along with the turmeric, creating a smooth and thick paste without lumps.
  • When the milk is warm, add the prepared paste. Stir continuously with a whisk and bring to a boil.
  • Keep stirring on low heat until the mixture is thick.
  • Divide the resulting cream into 5 cocotte, level the surface, and let firm first at room temperature and then in the refrigerator for at least 4 hours.
  • When ready to serve, sprinkle the surface of the crème brûlée with maple sugar and use a blowtorch to create the crispy crust. If you do not own a blowtorch, you can place the cocottes under the grill of a ventilated oven on maximum power for 5 minutes.
  • Garnish each serving with slices of peeled orange and pink grapefruit, and a mint leaf.
