Vegan pulled pork with maple syrup

Ingredients

  • 2 buns with sesame seeds
  • 300 g of seitan strips
  • 1 clove of garlic
  • 1 tablespoon smoked paprika
  • 120 g of barbecue sauce
  • 30 ml of soy sauce
  • 20 g of tomato paste
  • 10 ml of MapleFarm Pure Maple Syrup – Dark
  • 1 teaspoon apple cider vinegar
  • extra virgin olive oil
  • 80 g of vegan mayonnaise
  • 1 tablespoon Dijon mustard
  • 1 teaspoon apple cider vinegar
  • 50 g of purple cabbage
  • 50 g of savoy cabbage
  • 50 g julienned carrots
  • ½ red onion
  • salt

Instructions

  • Start by preparing the coleslaw salad. Create the dressing by blending vegan mayonnaise with mustard, apple cider vinegar and 10ml maple syrup. Adjust for salt.
  • Cut the purple cabbage and savoy cabbage into very thin slices. Combine the vegetables in a large bowl, also mixing in the julienned carrots and thinly sliced onion, and season with the prepared sauce. Allow to season.
  • To prepare the pulled pork, fray the seitan shreds with your hands.
  • Heat two tablespoons of oil in a skillet, add the squeezed garlic clove and the seitan shreds, and mix in the paprika.
  • Let it cook for about 5 minutes, then combine the barbecue sauce, soy sauce, tomato paste, 10ml maple syrup, and apple cider vinegar.
  • Add 200 ml water, stir well, cover and continue cooking for 10 more minutes on low heat.
  • Open the buns in half and place them on a plate from the inside until hot.
  • Stuff them with a generous amount of vegan pulled pork on the base, top with coleslaw, and close the sandwiches with the top. Serve immediately.
