Grilled vegetables with maple syrup and feta cheese

Ingredients

  • 1 yellow bell pepper
  • 1 red bell pepper
  • 2 zucchini
  • 2 eggplants
  • 150g Feta cheese
  • 5 tablespoons of extra virgin olive oil
  • 1 tablespoon balsamic vinegar
  • garlic
  • 2 tablespoons of MapleFarm Pure Maple Syrup – Amber
  • Thyme
  • Parsley
  • Mint
  • Salt

Instructions

  • Cut peppers into 5/6 cm wide slices and slice eggplant and zucchini into long slices.
  • Grill all vegetables on a hot cast-iron pan or barbecue, a few minutes per side.
  • Let cool and make the dressing by mixing the maple syrup, oil, balsamic vinegar, salt and chopped herbs.
  • Pour the dressing over the vegetables, stir, and add the diced feta.
  • Let them marinate in the refrigerator for a few hours for the flavors to meld, and enjoy them cold accompanied by garlic toast.
