Vegan almond flour cake with maple syrup

Ingredients

For the cake:

  • 130 g of all-purpose flour + additional for greasing the mold
  • 260 g of almond flour
  • 15 g of baking powder
  • A small pinch of baking soda
  • A pinch of salt
  • 110 ml (135 g) of MapleFarm Pure Maple Syrup – Amber
  • 50 g of corn oil + additional for greasing the mold
  • 260 ml of almond-based vegan milk

To decore:

Instructions

  • Preheat the oven to 180°C (356°F).
  • Sift the two flours with the baking powder, baking soda, and salt.
  • Separately, whisk the maple syrup with the corn oil and almond-based vegan milk using a hand whisk. Gradually incorporate the dry ingredients while mixing with a silicone spatula.
  • Transfer the batter into the previously oiled and floured mold and bake for approximately 50 minutes.
  • Cover the surface with a sheet of aluminum foil as soon as it becomes golden. Before removing it from the oven, perform the toothpick test (insert it into the center of the cake; it should come out clean).
  • Allow it to cool completely before removing it from the mold.
  • Serve each slice with a spoonful of vegan yogurt, a drizzle of maple syrup, and your choice of fruits.
